This is a really great salad from the 1970's or thereabouts. One dish meal. Easy to make healthier too.
This is a really great salad from the 1970's or thereabouts. One dish meal. Easy to make healthier too.
7-Layer Salad
(From a 1970’s cookbook)
Head of lettuce or chopped Romaine
1 c. celery, diced
1/2 c. bell pepper, diced
4 boiled eggs, sliced
1 med. onion, diced
1 pkg. frozen peas, thawed
1 sm. can water chestnuts
2 c. mayonnaise. See below…
2 tbsp. sugar
4 oz. cheddar cheese, grated
8 slices bacon
1 c. celery, diced
1/2 c. bell pepper, diced
4 boiled eggs, sliced
1 med. onion, diced
1 pkg. frozen peas, thawed
1 sm. can water chestnuts
2 c. mayonnaise. See below…
2 tbsp. sugar
4 oz. cheddar cheese, grated
8 slices bacon
Tear up lettuce and put in large see through serving dish. This is a pretty salad. Layer all ingredients
in the order they are listed. Mix mayonnaise and sugar together and spread onto
salad. Top with grated cheese and real fried bacon, crumble on top. OR use the dressing idea below (my
favorite). You can make this the night
before.
DRESSING:
1 c. sour cream
1 pkg. Ranch style dressing
1 c. mayonnaise
1 pkg. Ranch style dressing
1 c. mayonnaise
Add to layer mixture on top.
Best to toss before serving.
Garnish w/little tomatoes.
