Persimmon Cookies
(just as I received it from an older gal)
1/2 C. butter or margarine
1 C. sugar
1 egg beaten
1 C. persimmon pulp
1 tsp. lemon extract
salt
2 C. sifted flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp cloves
1/2 tsp nutmeg
1/2 ginger
3/4 C. raisins
3/4 C. nutmeats
Bake at 350 degrees on greased cookie sheet. Approx 10 minutes.
Yield: 6 dozen.
My notes: I don't use salt. Nutmeg is my lead spice but not overwhelming. I baked closer to 15 minutes. I never get the amount recipes say...I got about 3 1/2 doz. I have tasted them & they are so good!!
If you try these, please let me know what you think.

My these cookies look so good! Persimmons are easily available down here in the south, but I seem to be the only one in my family who likes them! Did you know they freeze well? I just place them in a zip lock and pop them in the freezer whole! God bless and have a wonderful weekend!
