Persimmon Cookies

Persimmon Cookies
(just as I received it from an older gal)    
1/2 C. butter or margarine                      
1 C. sugar                                              
1 egg beaten                                        
1 C. persimmon pulp                               
1 tsp. lemon extract                                
salt                                                        
2 C. sifted flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp cloves
1/2 tsp nutmeg
1/2 ginger
3/4 C. raisins
3/4 C. nutmeats

Bake at 350 degrees on greased cookie sheet.  Approx 10 minutes.
Yield:  6 dozen.

My notes:  I don't use salt.  Nutmeg is my lead spice but not overwhelming.  I baked closer to 15 minutes.  I never get the amount recipes say...I got about 3 1/2 doz.  I have tasted them & they are so good!!

  1. My these cookies look so good! Persimmons are easily available down here in the south, but I seem to be the only one in my family who likes them! Did you know they freeze well? I just place them in a zip lock and pop them in the freezer whole! God bless and have a wonderful weekend!
